Nothing brings people together like good food...and essential oils. I grew up with a love for cooking. Growing up in an Italian household there was enough pasta and cheese to go around for decades, but there was also love. So much love went into cooking each dish. Now as a mother, my daughter has an urgency to be in the kitchen and it is one more way for us to connect, make memories and teach her things she can use for a lifetime.
When fall time rolls around, nothing excites me more than making soup. I have a slight obsession with beets too; on salads, smoothies, toast, pizza, but tonight it was soup. This soup did not disappoint. The depth of flavor I was able to create in a short time....anyone can do it!!!!
Spiced Lentil Soup with Beets & Delicata Squash
2 medium whole beets , washed and trimmed.
1 Delicata Squash, washed and diced
1/2 Tbsp olive oil
1 cup dry red lentils
5 cups vegetable broth
1 Tbsp coconut oil
1 large yellow onion, diced
2 garlic cloves, diced
1 tsp. ground turmeric
1 tsp. curry powder
1 tsp. fresh ginger
3 drops Doterra Cardamom or 1/2 tsp ground cardamom
1/2 tsp. ground cinnamon
1/4 tsp. ground black pepper
Pinch of crushed red pepper
Pinch of ground nutmeg
1- 15oz can of full fat coconut milk
3-4 drops of Doterra Lime or 1 Tbsp. lime juice.
2 tsp. dried thyme
1 Tbsp. Sugar
1/2 tsp. Pink Salt
Let's Get Cooking...
1. Preheat oven to 400 F. Wrap beets loosely in tinfoil. Place on a baking sheet. (I cheated and bought the cooked beets from Costco) Toss the diced squash in olive oil and scatter on the same baking sheet. Roast at 400 F for about 30 minutes. Stir the squash at 15 minutes. Remove when done and allow to cool.
While the veggies are roasting, in a large soup pot, bring the lentils and vegetable broth to a boil. Stir occasionally. Do not let it boil over. Reduce to low and cook for 15 minutes.
In a fry pan, heat coconut oil over low. Add onion & garlic and sauté for a few minutes.
Next, add turmeric through nutmeg to onion/garlic mixture and sauté for about 8 minutes. Extra tip: When using essential oils -- I like to measure out spices I am adding at one time and then add the essential oil to the bowl last. This way the essential oil is absorbed by other spices and distributes more evenly.
Once lentils are cooked, add coconut milk, lime, thyme, sugar & salt. mix well. Add squash to sliced beets to onion mixture. Stir until combined.
Serve hot. Garnish suggestions; cilantro, avocado or cheese.
